A Very Easy Fruity Halo Halo (Vegan Style)

With both blender and Magic Bullet out of order, I was scratching my head at what to do with our morning smoothie in progress. "Just eat it," was mom's suggestion, "it's a Halo Halo then."
Halo Halo (which is Tagalog for "mix"; see Wikipedia) usually consist of shaved ice, fruit, beans, and/or milk, cream,and/or ice cream depending on the variation. In this version we used frozen fruit and soy milk instead of ice shavings and milk. The chose of ingredients reflect our personal taste; you can customize according to yours.

Halo Halo
(Serves 2)
  • 1/2 C frozen strawberries halves
  • 1/2 C frozen blueberries
  • 1/4 C pineapple, cubed
  • 1/2 small mango, cubed
  • 1/4 avocado, cubed
  • 1/3 C Soy milk
  • 1/3 C cold water
  • 1/4 C pine nuts
  • pinch of roasted zest
  • 1 banana, quarter and circular cut
* Personal Note: We tend to store our fruits that are in-stock all year long in the fridge (except for the banana), but our fruit, vegetables (pre-blanched), flour, nuts, etc that have short season or use on occasion we store in our freezer.
  1. In a bowl collect frozen ingredients and leave to side to thaw a bit. Collect none-frozen ingredient at this time.
  2. Once thawed enough to cut easily, but not runny, dice strawberries. Cut pineapple, mango, avocado in bite-size cubes. Add and mix all ingredients to bowl.
  3. Add soy milk, water, nuts, and zest to bowl and mix.
  4. Cut bananas last (as they tend to brown very quickly), add, and mix.
  5. Divide up mix and enjoy! Better eaten sooner then later as it takes on a mushy quality over time.
